Summary
We are looking for a chef with experience in food processing industry (preferably freeze dried) who can transition from traditional cooking to culinary science, focusing on scaling recipes for mass production while preserving nutrition, flavor, and texture. The person need to work from our Plant located in Sultanpur Industrial area, Medical devices Park, Ameenpur Mandal, Sangareddy-502032
Key Responsibilities
Recipe Development & Scaling
- Formulating menus: Designing meals that survive sublimation.
- Scaling recipes: Converting kitchen portions into industrial batches.
- Testing moisture: Ensuring ingredients dry at uniform rates.
- Rehydration testing: Verifying texture after adding hot water
Product Quality & Innovation
- Flavor retention: Enhancing spices to counter flavor loss.
- Texture management: Selecting ingredients that do not turn mushy.
- Nutritional mapping: Balancing macros for long shelf lives.
- Sourcing ingredients: Choosing raw materials fit for industrial dryers.
Production & Process Control
- Defining parameters: Setting exact cooking times before freezing.
- Blanching optimization: Standardizing pre-treatment steps to lock color.
- Standard Operating Procedures: Writing precise culinary blueprints for factory workers.
- Yield analysis: Tracking weight changes from raw to dried state.
Required Qualifications and Experience:
- Educational Qualifications: Degree: Bachelor's degree in Food Science, Culinary Science, or Food Technology or Alternative Degree in Culinary Arts paired with food science certifications.
- Technical & Industry Knowledge
- Dehydration Science: Deep understanding of sublimation, water activity and moisture retention.
- Industrial Scaling: Ability to convert small kitchen recipes into large-scale factory formulas.
- Thermal Processing: Knowledge of blanching, cooking times, and freezing curves.
- Professional Experience: 2–5 years experience working in a commercial food production facility or pilot plant.
