Role Overview
The Pastry Chef de Partie (CDP) is responsible for overseeing a specific section of the pastry kitchen, ensuring consistent quality, timely production, and adherence to recipes and presentation standards. This role works closely with the Head Pastry Chef and supports junior team members (Commis) in daily operations.
Key Responsibilities
- Prepare and produce pastries, breads, desserts, or other baked goods within your assigned section (e.g., viennoiserie, cakes, plated desserts, chocolate work)
- Follow standardized recipes and maintain consistency in taste, texture, and presentation
- Monitor stock levels for your section and communicate ingredient needs to the Head Pastry Chef
- Ensure all food safety, hygiene, and sanitation standards are met (HACCP compliance)
- Train, guide, and supervise Commis Chefs and kitchen assistants within your section
- Manage time effectively to meet production schedules and service deadlines
- Assist with inventory counts, ordering, and minimizing waste
- Maintain a clean, organized, and safe working station at all times
- Support new product development and seasonal menu changes as needed
- Communicate proactively with the Head Pastry Chef about any issues, shortages, or equipment problems
Requirements
- Proven experience as a Pastry Chef de Partie, Demi Chef de Partie, or similar role in a professional kitchen or bakery
- Strong knowledge of pastry techniques (lamination, tempering, sugar work, etc. — adjust to your bakery's specialty)
- Ability to work efficiently under pressure in a fast-paced environment
- Understanding of food safety regulations and best practices
- Strong attention to detail and commitment to quality
- Good communication and team leadership skills
- Flexibility to work early mornings, weekends, and holidays as required
Nice to Have
- Experience with [specific specialty, e.g., French pastry, viennoiserie, custom cake decoration]
- Familiarity with allergen management and dietary accommodation (vegan, gluten-free, etc.)
Pay: ₹25,000.00 - ₹30,000.00 per month
