A Chinese Commis 1 is a junior-to-mid-level chef who works under senior chefs (like a Chef de Partie or Sous Chef) to prepare, cook, and present authentic Chinese dishes. This role involves handling mise en place (ingredient prep), operating cooking stations, and maintaining strict kitchen hygiene standards.
Key Responsibilities
- Food Preparation: Assist in preparing ingredients for traditional Chinese dishes, including cutting vegetables, marinating meats, and making sauces.
- Cooking: Support senior chefs with basic wok operations, steaming, deep-frying, and noodle or dumpling preparation.
- Quality & Consistency: Follow standard recipes, monitor cooking times, and maintain proper portion control to reduce food waste.
- Hygiene & Sanitation: Ensure the Chinese kitchen station is clean, sanitized, and organized. Store ingredients correctly using the FIFO (First-In, First-Out) method.
- Inventory & Stock: Assist with stock rotation, labeling, and notifying seniors of low inventory.
- Team Collaboration: Work efficiently with the rest of the kitchen brigade to ensure timely food service.
Requirements & Qualifications
- Experience: Typically 1-2 years of experience working in a professional kitchen, with a focus on Chinese cuisine.
- Skills: Strong knife skills and fundamental knowledge of Chinese cooking techniques (e.g., stir-frying) and flavor profiles.
- Knowledge: Familiarity with HACCP or local food safety and hygiene regulations.
- Attributes: Ability to work efficiently in a high-pressure, fast-paced environment and a willingness to take feedback from senior chefs
