A Commis 1 (or First Commis) is a senior junior chef who prepares ingredients, assists senior chefs (like the Chef de Partie) with basic cooking, and manages station hygiene. They help with heavy daily production, oversee food storage, and ensure dishes meet established recipe and presentation standards.
Key Responsibilities Food Preparation & Cooking
- Mise en place: Prep and portion ingredients by washing, peeling, chopping, and measuring.
- Basic cooking: Assist in preparing sauces, salads, and cooking specific components like meats, vegetables, and starches.
- Plating: Help senior chefs plate and garnish dishes during service. [1, 2, 3, 4]
Inventory & Stock Management
- Accept daily deliveries, inspect food quality, and verify ordered items.
- Practice FIFO (First-In, First-Out) to rotate stock and prevent spoilage.
- Monitor inventory levels and notify supervisors of missing or depleted supplies. [1, 2, 3]
Safety & Sanitation
- Clean and organize the assigned kitchen station.
- Maintain safety protocols by mopping spills, cleaning spills, and handling kitchen waste.
- Record temperature logs, date food labels, and comply with all food health and safety regulations
Pay: ₹25,000.00 - ₹30,000.00 per month
