Job Summary
We are seeking an experienced Purchase Manager with a strong background in the restaurant and hospitality industry. The ideal candidate should have extensive knowledge of food, beverage, liquor procurement, vendor management, inventory control, and cost optimization. The role requires ensuring the timely availability of quality products while maintaining budgetary controls and compliance with company standards.
Key ResponsibilitiesProcurement & Purchasing
- Manage the procurement of food, beverages, liquor, packaging materials, kitchen equipment, and operational supplies.
- Source and negotiate with vendors to obtain the best pricing, quality, and delivery terms.
- Prepare and process purchase orders based on approved requisitions.
- Monitor market trends, pricing fluctuations, and product availability.
Liquor Procurement & Compliance
- Handle procurement of liquor, wines, spirits, and alcoholic beverages as per business requirements.
- Maintain relationships with authorized liquor suppliers and distributors.
- Ensure compliance with state excise laws, licensing requirements, and company policies related to liquor procurement.
- Monitor liquor inventory levels and prevent stock shortages or overstocking.
Vendor Management
- Identify, evaluate, and onboard new suppliers.
- Conduct periodic vendor performance reviews based on quality, pricing, and service standards.
- Resolve supplier-related issues and discrepancies efficiently.
Inventory & Cost Control
- Coordinate with stores and operations teams to maintain optimum inventory levels.
- Monitor stock movement and consumption patterns.
- Implement cost-saving initiatives without compromising quality.
- Analyze purchase reports and inventory variances.
Documentation & Reporting
- Maintain accurate procurement records, contracts, quotations, and purchase orders.
- Generate periodic reports on purchases, vendor performance, and cost analysis.
- Ensure proper documentation for audits and compliance purposes.
Coordination
- Work closely with kitchen, bar, stores, finance, and operations teams to forecast procurement requirements.
- Ensure timely delivery of goods to all outlets and locations.
Qualifications
- Bachelor's degree in Supply Chain Management, Hospitality Management, Commerce, or related field.
- Additional certification in Procurement or Supply Chain Management will be an advantage.
Experience
- 5–10 years of procurement experience in restaurants, hotels, QSRs, lounges, bars, or hospitality businesses.
- Strong experience in liquor and beverage purchasing.
- Knowledge of inventory management systems and ERP software.
Required Skills
- Strong negotiation and vendor management skills.
- Knowledge of food and beverage procurement processes.
- Understanding of liquor brands, pricing, excise regulations, and licensing requirements.
- Excellent analytical and cost-control abilities.
- Proficiency in MS Excel and procurement software.
- Strong communication and interpersonal skills.
- Ability to work under pressure and manage multiple suppliers simultaneously.

CTC: As per company standards and candidate experience.
Location: Vasant Kunj, Delhi.
Pay: Up to ₹50,000.00 per month
