Demi Chef de Partie (DCDP) – Garde Manger

Job Summary
Semolina Kitchens is seeking a dedicated Demi Chef de Partie (DCDP) – Garde Manger to support the Cold Kitchen operations at our premium Airport Lounge. The successful candidate will assist in preparing fresh, high-quality cold dishes while maintaining food safety, hygiene, and presentation standards.
Key Responsibilities
- Prepare salads, sandwiches, wraps, cold appetizers, fruit platters, cheese platters, and other cold kitchen items.
- Assist in the daily operations of the Garde Manger section.
- Ensure timely preparation and replenishment of buffet items.
- Maintain consistency in quality, taste, and presentation.
- Complete mise en place before service.
- Follow HACCP standards, food safety procedures, and hygiene practices.
- Ensure proper storage, stock rotation (FIFO), and minimize food wastage.
- Maintain cleanliness and organization of the work area.
- Coordinate with senior chefs and other kitchen sections during service.
Qualifications & Experience
- Diploma or Degree in Hotel Management or Culinary Arts.
- 2–4 years of experience in Garde Manger within hotels, airport lounges, airline catering, or premium hospitality.
- Knowledge of cold kitchen operations, buffet preparation, and food presentation.
- Familiarity with food safety and hygiene standards.
- Ability to work in rotational shifts, including nights.

- Good knowledge of international cold kitchen preparations.
- Strong attention to detail and presentation.
- Good communication and teamwork skills.
- Ability to multitask in a fast-paced kitchen environment.
