Profile Introduction
We are looking for an experienced Seafood Chef specializing in Goan Cuisine to prepare authentic seafood delicacies and traditional Goan dishes. The ideal candidate should possess strong expertise in coastal cuisine, seafood handling, menu planning, and kitchen operations.
Key Responsibilities
- Prepare authentic Goan seafood dishes including fish curries, prawn specialties, crab preparations, shellfish dishes, and traditional coastal delicacies.
- Ensure freshness, quality, and proper storage of seafood products.
- Maintain consistency in taste, presentation, and portion control.
- Develop and update seafood and Goan specialty menus.
- Monitor inventory levels and coordinate procurement of fresh seafood ingredients.
- Ensure proper cleaning, marination, and preparation of seafood products.
- Follow food safety, hygiene, and sanitation standards at all times.
- Minimize food wastage and maintain cost-effective kitchen operations.
- Supervise kitchen staff and provide guidance on seafood preparation techniques.
- Coordinate with restaurant service teams to ensure smooth food delivery.
- Maintain kitchen equipment and report maintenance requirements.
- Stay updated with regional culinary trends and introduce innovative seafood offerings.
Profile Requirements(What is the employer looking for?)
- Diploma or Degree in Hotel Management / Culinary Arts preferred.
- 4–8 years of experience in Goan cuisine and seafood preparation.
- Strong knowledge of traditional Goan spices, masalas, and cooking techniques.
- Expertise in handling fish, prawns, crabs, lobsters, and other seafood varieties.
- Knowledge of food costing and inventory management.
- Strong understanding of food safety and hygiene standards.
- Ability to manage kitchen operations independently.
