We are seeking a hardworking and detail-oriented Commis Chef to join our brigade. In this role, you will support the Chef de Partie in daily operations, ensuring that all ingredients are prepped to specification and that your assigned station remains clean, organized, and compliant with food safety regulations. This is an ideal position for a culinary graduate or an aspiring chef looking to build foundational skills in a professional, high-volume kitchen.
Key Responsibilities
- Mise en Place: Prepare ingredients daily (washing, peeling, chopping, weighing, and portioning) according to recipe requirements and station needs.
- Station Support: Assist senior chefs during service by plating dishes, managing stocks, and monitoring cooking times.
- Quality Control: Ensure all food items meet established presentation and quality standards before leaving the pass.
- Inventory Management: Rotate stock using FIFO (First-In, First-Out) principles, label containers clearly, and report low inventory levels to the Sous Chef.
- Hygiene & Safety: Maintain a spotless workspace throughout the shift, adhere strictly to HACCP guidelines, and ensure all equipment is sanitized post-service.
- Team Collaboration: Communicate effectively with front-of-house staff and other kitchen sections to ensure smooth service flow.
Required Qualifications & Skills
- Experience: Previous experience as a Commis Chef or a formal Culinary Arts certification is preferred.
- Technical Skills: Proficiency in basic knife skills, fundamental cooking techniques (sautéing, boiling, grilling), and an understanding of food temperature safety.
- Physical Stamina: Ability to stand for long periods, lift heavy supplies (up to 20kg), and work in a fast-paced, high-temperature environment.
- Work Ethic: Strong time-management skills and the ability to follow precise instructions under pressure.
- Certifications: Valid Food Handler’s Certificate (or willingness to obtain one immediately upon hiring).
