We are seeking an experienced Coastal Chef (Seafood Specialist) who possesses expertise in preparing authentic seafood dishes from coastal regions of India, including Goan, Malvani, Mangalorean, Konkan, Kerala, and other regional cuisines. The ideal candidate should be passionate about seafood preparation, menu innovation, and maintaining the highest standards of food quality and hygiene.
Key Responsibilities
- Prepare authentic seafood dishes from various coastal cuisines.
- Handle fish, prawns, crabs, lobsters, squid, shellfish, and other seafood products.
- Ensure proper cleaning, processing, marination, and storage of seafood.
- Develop and standardize recipes for seafood and coastal specialty dishes.
- Maintain consistency in taste, quality, and presentation.
- Monitor inventory and coordinate procurement of fresh seafood ingredients.
- Ensure adherence to food safety, hygiene, and sanitation standards.
- Control food costs, minimize wastage, and maintain portion consistency.
- Train and supervise junior kitchen staff on seafood preparation techniques.
- Coordinate with restaurant and banquet teams for smooth service operations.
- Assist in menu planning and seasonal seafood promotions.
- Ensure kitchen equipment is maintained and operated safely.
- Stay updated with emerging culinary trends in coastal and seafood cuisine.
Profile Requirements(What is the employer looking for?)
- Diploma or Degree in Hotel Management / Culinary Arts preferred.
- 4–10 years of experience in seafood and coastal cuisine preparation.
- Strong expertise in Goan, Malvani, Konkan, Kerala, or Mangalorean cuisine.
- Excellent knowledge of seafood handling and preservation techniques.
- Experience working in hotels, resorts, seafood restaurants, or specialty dining establishments.
- Strong understanding of food costing and inventory management.
- Knowledge of HACCP, food safety, and kitchen hygiene standards.
- Ability to manage kitchen operations independently.
- Leadership skills with experience supervising kitchen teams.
