Job Summary
The Restaurant Storekeeper is responsible for receiving, storing, issuing, and maintaining inventory of food, beverages, cleaning supplies, and operating materials. The role ensures accurate stock records, minimizes wastage, maintains proper storage conditions, and supports smooth restaurant operations through effective inventory control.
Key Responsibilities:
Inventory Management
- Receive and inspect all deliveries for quality, quantity, and accuracy against purchase orders.
- Store goods according to food safety and company standards.
- Maintain accurate inventory records using manual or computerized systems.
- Monitor stock levels and inform management when reordering is required.
- Conduct daily, weekly, and monthly inventory counts.
- Reconcile physical stock with inventory records and investigate discrepancies.
Receiving and Issuing
- Verify supplier invoices, delivery notes, and purchase orders.
- Issue food, beverages, packaging, and supplies to departments based on approved requisitions.
- Ensure proper documentation for all receipts and issues.
- Rotate stock using the FIFO (First In, First Out) principle and monitor expiry dates.
Storage and Food Safety
- Ensure proper storage temperatures for dry, chilled, and frozen items.
- Maintain cleanliness and organization of store areas.
- Separate food products from chemicals and cleaning supplies.
- Report damaged, expired, or spoiled items promptly.
- Comply with food safety, hygiene, and health regulations.
Record Keeping
- Maintain stock registers, bin cards, and inventory reports.
- Prepare daily receiving reports and stock movement reports.
- Assist in month-end inventory and stock valuation.
- Keep supplier documentation and inventory records up to date.
Loss Prevention
- Monitor stock movement to prevent theft, loss, and wastage.
- Ensure secure storage of high-value items.
- Report inventory variances and unusual stock movements to management.
- Follow company policies for inventory control and security.
Coordination
- Coordinate with the purchasing department regarding deliveries and shortages.
- Work closely with the kitchen, bar, and service teams to ensure timely issuance of materials.
- Support audits by providing inventory records and documentation.
Skills and Competencies
- Strong organizational and time management skills.
- Accuracy and attention to detail.
- Basic mathematical and record-keeping skills.
- Knowledge of FIFO, FEFO, and inventory control procedures.
- Good communication and teamwork skills.
- Ability to work under pressure and meet deadlines.
