Job Title: Assistant Cafe Manager
Job Summary
We are seeking a "Warmly Intelligent" and energetic leader to help launch and anchor Alpaca, a chocolate cafe dedicated to bringing cacao back to the cup. You will be responsible for overseeing daily operations that celebrate cacao's story, motivating a team of "Cacao Storytellers," and ensuring every guest experience is as honest as our chocolate. The ideal candidate is a hands-on leader who thrives in a space that is modern, elegant, and timeless, with a genuine passion for authentic chocolate craft.
Key Responsibilities
1. Operational Management & Launch
- Andean Standards: Support the Cafe Manager in setting up a service flow that mirrors our brand's character—clean, efficient, and inspired by the Andes mountain ranges.
- Site Leadership: Assume full responsibility for the "warm and easy" environment in the absence of the Cafe Manager, ensuring the "spotlight" stays on the chocolate.
- Atmosphere Care: Oversee the seating areas and workstations to ensure they remain welcoming and free of clutter around the brand marks.
- Equipment Stewardship: Monitor the use of specialized chocolate equipment and smallware, reporting any malfunctions to ensure no shortcuts are taken in our craft.
2. Team Leadership & Training
- The Alpacraft Mentor: Assist in onboarding baristas on the 4-step craft process: Choosing the drink, selecting cacao intensity (28% to 100%), picking the milk, and adding final flourishes .
- Scheduling & Flow: Create weekly staff schedules that balance availability with peak "everyday comfort" hours, maintaining a positive and productive team culture.
- Performance Coaching: Provide real-time coaching using our "Sensory and Descriptive" tone, helping the team paint a picture of the experience for every guest .
3. Customer Experience & Brand Loyalty
- Honest Ambassadorship: Act as the face of the brand, welcoming guests with the philosophy: "Step in. Sip something honest.".
- Sensory Rapport: Build loyalty by using evocative vocabulary—describing sips that "coat the palette with warmth"—and handling feedback with a professional "wink, not a punchline" .
- Initiative Implementation: Drive sales through the Cacao Atlas and seasonal "Alpacraft" promotions that encourage guests to explore new cacao intensities.
4. Inventory & Quality Control
- Pure Sourcing: Manage inventory levels for the world's finest cacao, dairy, and plant milks (Oat/Almond), ensuring no palm oil or artificial flavors enter the station .
- Zero-Shortcut Stock: Conduct regular counts and implement strategies to minimize waste, targeting a threshold of less than 0.25% to protect our "Pure & Transparent" values.
- Intensity Consistency: Maintain strict quality control to ensure every cup, from 28% White to 100% Dark, follows the "Thick. Silky. Real." standard .
5. Financial & Administrative Tasks
- Cash Stewardship: Manage daily cash handling and POS reconciliation with 100% accuracy, safeguarding the assets of the organization.
- Operational Reporting: Prepare detailed reports on sales targets, APC (Average Per Customer), and suggestive selling performance of add-ons like Pink Pepper or Sea Salt.
Requirements & Skills
- Experience: 2+ years in a supervisory role within a specialty food, cafe, or high-end QSR environment.
- Chocolate & Coffee Knowledge: Strong understanding of brewing techniques and the ability to explain the difference between a 46% and 82% cacao intensity (and why 46%+ is vegan-friendly) .
- Communication: Ability to use "Warmly Intelligent" communication that is smart but never intimidating.
- Tech Savvy: Proficiency with POS systems and Google Suite to track "Jagged Edge" typesetting or digital presence updates.
- Passion: A genuine love for the "Maya" story and the rituals of cacao.
