Key Responsibilities & Accountabilities (R&A)
1. Recipe Execution & Preparation
*Scaling: Accurately weighing and staging all raw materials (flour, sugar, eggs, fats, leavening agents) as per standard operating procedures.
*Pre-mixing: Managing processes like fat creaming and egg blending to ensure consistent batter bases
2. Process Control & Monitoring
*Parameter adherence: Monitoring batter temperature, viscosity, and specific gravity to guarantee final cake volume and texture.
*Equipment operation: Operating high-capacity industrial cake mixers, adjusting speeds, and monitoring mixing times.
*Cake gel & additives: Precisely adding emulsifiers and stabilizers (e.g., polyglycerol esters of fatty acids) to prevent oil and water separation
3. Quality & Food Safety
*Quality checks: Conducting real-time viscosity and pH checks on the batter before it proceeds to the depositor/oven.
*Hygiene compliance: Maintaining stringent sanitation standards in the mixing room to prevent microbial contamination.
4. Team Management & Reporting
*Shift management: Supervising the mixing crew and scheduling tasks to ensure continuous batter supply to the production line.
*ERP Logging: Documenting batch records, ingredient traceability, and yield reports in the plant's production tracking system.
Pay: ₹30,000.00 - ₹36,000.00 per month
