About the Role
Chettiar Family Kitchen (CFK) is looking for a passionate and skilled Chef specializing in non-vegetarian cuisine. We are seeking a candidate with strong expertise in preparing a wide variety of biryanis, chicken starters, seafood dishes, marinades, and traditional curries. The ideal candidate should have excellent cooking skills, consistency in taste, knowledge of food safety standards, and the ability to maintain high-quality food preparation.
Key Responsibilities:
- Prepare and cook different varieties of biryani, including Chicken, Mutton, Fish, Prawn, and other specialty biryanis.
- Prepare non-vegetarian starters such as:
- Chicken 65
- Chicken Fry
- Pepper Chicken
- Dragon Chicken
- Fish Fry
- Fish 65
- Prawn 65
- Crab 65
- Squid and other seafood starters
- Prepare and manage marinades for chicken, mutton, fish, prawns, crab, and other seafood items.
- Cook a variety of curries, gravies, and specialty dishes using chicken, mutton, seafood, and other non-vegetarian ingredients.
- Ensure consistency in taste, quality, presentation, and portion control.
- Maintain cleanliness, hygiene, and food safety standards in the kitchen.
- Assist in menu development and recipe standardization.
- Monitor stock requirements and coordinate with management regarding kitchen inventory.
- Train and guide kitchen assistants when required.
- Ensure minimal wastage and efficient kitchen operations.
Required Skills & Qualifications:
- Minimum 2 years of experience working in hotels, restaurants, resorts, food courts, or commercial kitchens.
- Strong hands-on experience in preparing biryanis, non-vegetarian starters, curries, and seafood dishes.
- Excellent knowledge of marination techniques and spice blending.
- Ability to handle high-volume cooking while maintaining quality.
- Understanding of food hygiene and kitchen safety practices.
- Ability to work independently and as part of a team.
- Passion for cooking and maintaining authentic taste and quality.
Preferred Skills:
- Experience in preparing a variety of seafood dishes including fish, prawns, crab, and squid.
- Basic knowledge of vegetarian dishes will be an added advantage (not mandatory).
- Experience in menu planning and kitchen management is preferred.
Chef Skill Assessment (Mandatory)
As part of the recruitment process, shortlisted candidates will be required to attend an in-person cooking assessment at the CFK kitchen.
The candidate must prepare selected dishes and demonstrate:
- Cooking techniques
- Taste and flavor consistency
- Marination skills
- Biryani preparation skills
- Seafood and starter preparation
- Kitchen hygiene and work efficiency
Selection will be based on both experience and practical cooking performance.
Salary
Salary will be based on experience, skills, and performance during the practical cooking assessment.
