About Evil Onigiri
Evil Onigiri is a Japanese-inspired restaurant concept in Bangalore by Loudrthn Collective, built around bold flavours, a tight, focused menu, and a strong design-led brand experience. We are a small, high-standards team preparing for launch — every early hire will shape how we cook, serve, and grow.
The Role
As Restaurant Manager, you will run the day-to-day operations of Evil Onigiri — service quality, guest experience, staffing, inventory, and vendor coordination. Because we are pre-launch, you won't just run systems, you will build them from scratch: SOPs, rosters, supplier relationships, and the service culture of the brand. You will work directly with the founder and grow with the business.
Key Responsibilities
- Own daily front-of-house operations: opening/closing, service flow, and guest experience
- Build and maintain SOPs for service, billing, cash handling, and shift handovers
- Recruit, train, roster, and manage front-of-house staff; drive a warm, sharp service culture
- Manage inventory, purchasing, and vendor coordination in sync with the kitchen team
- Track daily sales, costs, and operational metrics; report to the founder with clear numbers
- Handle guest feedback, online reviews, reservations, and delivery-platform operations
- Ensure compliance with licenses, hygiene standards, and safety requirements
What We're Looking For
- 2-5 years in restaurant / cafe / QSR operations, with at least some supervisory experience
- A builder's mindset — comfortable creating processes where none exist yet
- Strong people skills: leading a small team and delighting guests in equal measure
- Working comfort with POS systems, basic spreadsheets, and delivery aggregator dashboards
- Degree or diploma in hotel management preferred; ownership and hustle matter more
