Earth Café is looking for a Back-End Manager to oversee Store Operations, Central Kitchen Operations, Compliance, Vendor Management, Inventory Control and MIS reporting.
Responsibilities:
A. STORE MANAGEMENT
- Outlet Support & Responsiveness
- Ensure uninterrupted availability of raw materials for all outlets.
- Fulfil urgent/ad-hoc requirements of outlets beyond the regular ordering list.
- Support R&D initiatives by procuring ingredients required for new product trials and innovation.
- Inventory Management
- Maintain weekly ordering cycles to avoid stock-outs and overstocking.
- Ensure zero variance between physical stock and system stock.
- Ensure correct storage of all materials, especially refrigerated and perishable items.
- Bill Entry & Documentation
- Ensure timely and accurate entry of all bills, including bills received directly at outlets.
- Forward physical copies of bills to Accounts within stipulated timelines.
- Vendor Management
- Maintain strong relationships with vendors for smooth and uninterrupted supplies.
- Develop and maintain backup vendors for critical materials.
- Coordinate with Accounts to ensure timely vendor payments.
- Cost Optimisation
- Obtain at least two quotations for generic items before purchase.
- Continuously identify opportunities for cost reduction without compromising quality.
- Negotiate favourable Minimum Order Quantities (MoQs) with vendors.
- Quota Management
- Monitor and control issuance of housekeeping and packaging materials to outlets.
- Store Maintenance & Hygiene
- Ensure daily cleaning and weekly organisation of store shelves.
- Maintain hygienic, pest-free and well-organised storage conditions.
- Compliance
- Ensure timely renewal and maintenance of FSSAI, Health and Fire Safety licences.
- Self Audits
- Conduct two self-audits every month.
- MIS
- Generate MIS reports relating to Inventory, Procurement and monthly vendor payouts.
B. CENTRAL KITCHEN MANAGEMENT
- Wastage Control
- Monitor actual versus ideal consumption and work towards reducing wastage.
- Equipment Maintenance
- Ensure preventive maintenance of all equipment.
- Arrange immediate repairs or replacements in case of breakdowns.
- Purchase & Receiving
- Regulate Central Kitchen purchases to ensure best quality at optimum cost.
- Verify billed quantities against received quantities and resolve discrepancies.
- Kitchen Hygiene & Discipline
- Maintain cleanliness, hygiene and pest-control standards.
- Ensure staff discipline, including uniforms, head covers and covers and workplace etiquette.
- Staff Food
- Monitor the quality and quantity of staff food sent to outlets.
- Dispatch
- Verify quantities of mise being dispatched to outlets and generate transfer challans.
- Ensure timely dispatch of all preparations and mise to outlets.
C. DATA MANAGEMENT & STAFF DATA ADMINISTRATION
- Generate platform sales reports.
- Generate sales reports for review of specific menu items.
- Generate reports relating to raw material utilisation.
- Add and remove junior staff from Pet Pooja.
- Assign appropriate system rights and access levels to staff members.
Requirements:
- Minimum 3 years’ experience in store management, procurement, inventory control, central kitchen operations or backend operations in the food service industry.
- Good knowledge of inventory management and vendor coordination.
- Working knowledge of MS Excel and ERP/POS systems.
- Ability to maintain records, generate reports and coordinate with multiple departments.
- Strong organizational and follow-up skills.
Pay: ₹28,000.00 - ₹35,000.00 per month
