Job Summary
We are seeking an experienced and passionate Chinese Sous Chef to support the daily operations of the kitchen and ensure the consistent preparation of high-quality Chinese cuisine. The ideal candidate should have strong knowledge of authentic Chinese cooking techniques, wok handling, sauces, stocks, and kitchen management, while maintaining high standards of hygiene, food quality, and teamwork.
Key Responsibilities
- Assist the Head Chef in managing daily kitchen operations.
- Prepare and oversee authentic Chinese dishes with consistency and quality.
- Handle wok cooking, sauces, soups, marinades, and mise en place efficiently.
- Supervise kitchen staff and ensure smooth coordination during service.
- Maintain food quality, presentation, and portion control standards.
- Monitor inventory, food costs, and kitchen supplies.
- Ensure cleanliness, hygiene, and food safety standards are followed at all times.
- Train and mentor junior kitchen staff.
- Support menu development and seasonal specials.
- Ensure timely preparation and service during busy operations.
Requirements
- Proven experience as a Chinese Sous Chef or Senior CDP in a professional kitchen.
- Strong knowledge of Chinese cuisine, cooking methods, and ingredients.
- Experience in high-volume restaurant operations preferred.
- Ability to manage kitchen teams and work under pressure.
- Good understanding of food safety and hygiene practices.
- Strong organizational and communication skills.
- Culinary certification or relevant training is an advantage.
Preferred Skills
- Expertise in wok cooking and sauce preparation.
- Knowledge of dim sum, Sichuan, Cantonese, or pan-Asian cuisine is a plus.
- Ability to maintain consistency and efficiency during peak hours.
- Team-oriented with a positive attitude and leadership qualities.
