Job Summary
We are seeking an experienced and passionate Kokan & Goan Cuisine Chef to prepare authentic regional dishes, maintain high food quality standards, and contribute to menu development. The ideal candidate should have strong knowledge of traditional coastal cooking techniques, seafood preparation, spice blends, and regional recipes from the Konkan and Goa regions.
Key Responsibilities
- Prepare authentic Kokan and Goan dishes, including seafood, vegetarian, and specialty regional recipes.
- Ensure consistency in taste, presentation, and quality of food.
- Develop and update menus based on seasonal ingredients and customer preferences.
- Monitor food preparation, cooking processes, and portion control.
- Maintain kitchen hygiene and food safety standards.
- Manage inventory, stock levels, and food cost control.
- Train and supervise kitchen staff on regional cooking techniques.
- Coordinate with suppliers to procure fresh ingredients and seafood.
- Minimize food wastage and ensure efficient kitchen operations.
- Adhere to all health, safety, and sanitation regulations.
Required Skills & Qualifications
- Proven experience in preparing Kokan and Goan cuisine.
- Strong knowledge of traditional recipes, spices, masalas, and cooking methods.
- Expertise in seafood preparation and coastal cuisine.
- Ability to work in a fast-paced kitchen environment.
- Knowledge of food safety and hygiene practices.
- Good communication and team management skills.
- Culinary certification or hotel management qualification is preferred.
Experience
- 3+ years of experience in Kokan and Goan cuisine (depending on the role level).
- Experience in restaurants, resorts, hotels, or specialty coastal cuisine establishments preferred.
Pay: ₹30,000.00 - ₹40,000.00 per month
