Role Overview
We are looking for a skilled Indian Tandoor Chef who has strong experience in preparing authentic North Indian tandoor items, kebabs, breads, and grilled dishes. The ideal candidate should be confident in handling a tandoor independently, maintaining consistent taste, texture, portioning, and presentation during daily operations.
Key Responsibilities
- Prepare and cook tandoor items such as tandoori chicken, chicken tikka, malai tikka, seekh kebab, paneer tikka, chaap, kebabs, and grilled starters.
- Prepare Indian breads including tandoori roti, butter roti, naan, butter naan, garlic naan, lachha paratha, and kulcha.
- Handle marination of veg and non-veg items as per standard recipes.
- Maintain proper cooking temperature and timing for tandoor items.
- Ensure consistent taste, tenderness, smokiness, color, and presentation.
- Manage daily mise en place for tandoor section.
- Follow proper hygiene, food safety, and cross-contamination standards.
- Maintain cleanliness of the tandoor, work station, tools, skewers, and storage area.
- Coordinate with curry, prep, and packing teams for smooth order flow.
- Monitor stock levels of marinated items, breads, charcoal/gas, spices, and tandoor ingredients.
- Reduce wastage by following portion control and storage guidelines.
- Ensure fast preparation during rush hours without compromising quality.
- Assist in new menu trials and improvements for tandoor items when required.
Required Skills
- Strong knowledge of Indian tandoor cooking techniques.
- Ability to prepare both veg and non-veg tandoor items.
- Good understanding of marinades, spice balance, grilling, roasting, and smoke flavor.
- Experience with tandoori breads and kebabs.
- Ability to work in a fast-paced kitchen or cloud kitchen environment.
- Knowledge of basic food hygiene and kitchen safety.
- Discipline in following SOPs, portion sizes, and recipe standards.
- Team player with good coordination skills.
Preferred Experience
- Experience in a North Indian restaurant, cloud kitchen, hotel, dhaba, or catering kitchen.
- Prior experience handling tandoor independently.
- Experience with delivery-focused food operations is a plus.
Candidate Requirements
- Minimum 4 years of experience as a Tandoor Chef.
- Should be comfortable working with both vegetarian and non-vegetarian items.
- Must be punctual, clean, disciplined, and quality-focused.
- Should be able to manage peak-hour pressure.
- Basic understanding of Hindi is preferred.
Pay: ₹18,713.47 - ₹35,113.87 per month
