Job Summary
Hotel Tamarind is seeking a skilled and experienced Tandoor Chef to join our culinary team. The Tandoor Chef will be responsible for preparing a variety of tandoori dishes, kebabs, breads, and grilled specialties for the hotel's restaurants, banquets, room service, and special events, ensuring consistent quality, flavor, and presentation.
Key Responsibilities
- Prepare and marinate meats, poultry, seafood, and paneer/vegetables for tandoori and grilled preparations
- Operate and manage the tandoor oven, maintaining optimal temperature and cooking conditions
- Prepare tandoori breads such as naan, roti, kulcha, and paratha to order
- Prepare kebabs, tikkas, and other grilled specialties with consistent taste, texture, and presentation
- Monitor marination times and quality to ensure freshness and flavor consistency
- Ensure proper storage, labeling, and rotation of ingredients (FIFO)
- Maintain cleanliness and hygiene of the tandoor section in line with food safety regulations (HACCP)
- Operate and maintain tandoor ovens, grills, and related equipment safely and efficiently
- Coordinate with the kitchen team during peak service hours and live counter setups for banquets and events
- Assist in menu planning and development of new tandoori/grill dishes
- Assist in costing and portion control to minimize wastage
- Train and guide junior chefs/kitchen trainees as required
Requirements
- Diploma/Certificate in Culinary Arts or related field
- Minimum 2–4 years of experience as a Tandoor Chef, preferably in a hotel or high-volume restaurant
- Strong knowledge of tandoor cooking techniques, marination, and spice blends
- Understanding of food safety and hygiene standards
- Ability to work early morning/evening shifts, weekends, and holidays as required
- Ability to work efficiently at a live counter under pressure during peak hours
- Attention to detail and consistency in taste and presentation
- Good communication and teamwork skills
Preferred Skills
- Experience running a live tandoor/grill counter for guests or events
- Knowledge of regional variations (Punjabi, Mughlai, Awadhi styles)
- Basic knowledge of allergen management and dietary-specific preparation
- Familiarity with kitchen inventory.
Pay: ₹22,000.00 - ₹26,000.00 per month
Work Location: In person
