Job Summary
A Commis II assists senior chefs in food preparation, cooking, and kitchen operations. The role focuses on maintaining food quality, hygiene standards, mise en place preparation, and supporting smooth kitchen service while developing culinary skills.
Key Responsibilities
- Prepare ingredients, including chopping, cutting, marinating, and portioning.
- Carry out mise en place for the assigned kitchen section.
- Cook and present dishes according to standard recipes and presentation guidelines.
- Maintain food quality, consistency, and portion control.
- Ensure compliance with food safety, hygiene, and HACCP standards.
- Keep workstations, equipment, and storage areas clean and organized.
- Monitor stock levels and inform supervisors about shortages.
- Assist Chef de Partie and Sous Chef during service operations.
- Minimize food wastage and support food cost control initiatives.
- Follow kitchen safety procedures and report equipment issues or hazards immediately.
- Support other kitchen sections when required during busy periods.
