Job Title: Commis II – Indian & Tandoor

Job Summary
The Commis II – Tandoor Chef is responsible for assisting in the preparation and cooking of authentic Indian tandoor dishes while ensuring consistency, quality, hygiene, and food safety standards. The role requires a good understanding of Indian cuisine, tandoor operations, marination techniques, and the ability to support the kitchen team in delivering high-quality food in a timely manner.
Key Responsibilities
- Prepare and cook a variety of tandoor dishes including breads, kebabs, tikkas, and roasted items as per standardized recipes.
- Assist in the preparation of Indian curries, gravies, rice dishes, and accompaniments whenever required.
- Prepare marinades, spice mixes, and mise en place for daily operations.
- Operate and maintain the tandoor oven safely and efficiently.
- Ensure food is cooked to the correct temperature, texture, and presentation standards.
- Maintain consistency in taste, portion size, and quality of all food items.
- Monitor stock levels of ingredients and inform senior chefs of replenishment requirements.
- Minimize food wastage through proper storage, handling, and portion control.
- Follow all food safety, HACCP, hygiene, and sanitation standards.
- Ensure cleanliness of the tandoor section, equipment, utensils, and workstations at all times.
- Assist with receiving, storing, and rotating stock following FIFO principles.
- Support senior chefs during buffet, banquet, and à la carte operations.
- Work collaboratively with other kitchen sections to ensure smooth service.
- Perform any other duties assigned by the Sous Chef or Chef de Partie.
Qualifications & Experience
- Certificate or Diploma in Hotel Management, Culinary Arts, or equivalent is preferred.
- Minimum 1–2 years of experience as a Commis or similar role in an Indian kitchen.
- Experience in operating a traditional tandoor is preferred.
Knowledge & Skills
- Good knowledge of Indian cuisine, particularly North Indian and tandoor preparations.
- Understanding of marination techniques, spice blends, and cooking methods.
- Knowledge of preparing Indian breads such as naan, roti, kulcha, lachha paratha, and roomali roti.
- Basic understanding of Indian curries, gravies, and rice preparations.
- Familiarity with food safety, hygiene, and HACCP standards.
- Ability to work efficiently in a fast-paced kitchen environment.
- Good organizational and time management skills.
- Ability to work as part of a team and follow instructions from senior chefs.
- Physically fit to work in a high-temperature kitchen environment.

Pay: ₹16,000.00 - ₹22,000.00 per month
