Sōzō Kitchen is a registered food business in Chennai operating the Affu Kitchen brand a premium shawarma and wraps stall launching at Marina Beach. We specialise in American-style and Arabian-style shawarma using quality ingredients, signature marinades, and four house-made sauces.
This is our first location. Our second outlet, Sōzō Kitchen restaurant, is planned for launch in 2026. We are building a small, committed kitchen team that grows with the brand. This is a ground-floor opportunity with a fast-moving food company.

ROLE OVERVIEW

As our Shawarma Chef, you will be the heart of the Affu Kitchen operation. You will manage the spit machine, prepare and marinate proteins daily, and ensure every item leaving our stall meets our quality standard. You will work directly with the founder and mentor the apprentice working under you.

KEY RESPONSIBILITIES

- Load, operate, and maintain the vertical shawarma spit machine (chicken and beef)
- Marinate proteins daily using our house recipes
- Prepare and cook all menu items during service including shawarma, wraps, burger shawarma, parotta shawarma, prawn shawarma, and grill items
- Monitor food temperature, freshness, and portion consistency across every order
- Train and guide the kitchen apprentice on daily tasks and recipes
- Maintain hygiene, cleanliness, and food safety standards at all times
- Conduct daily stock check and flag low inventory to the owner before each shift

REQUIREMENTS

- Minimum 1 year of experience in a shawarma stall, hotel kitchen, or food service role
- Must know how to operate a vertical shawarma spit machine — this is mandatory
- Basic knowledge of chicken and beef handling, marinating, and grilling
- Comfortable working evening shifts (3 PM to 11 PM, 6 days/week)
- Clean, disciplined, and able to work in a small team
- Lives within 45 minutes of Marina Beach, Chennai

We welcome final-year and recent graduates from hotel management, catering technology, or culinary arts programmes for a structured internship in this role.
What interns get:
- Hands-on training in live commercial kitchen operations
- Stipend: ₹8,000 – ₹12,000/month based on programme requirement
