Job Description – Research & Development (R&D) Chef
Menu Development
* Research and develop new food concepts and menu items.
* Design seasonal, festive, and promotional menus.
* Improve and standardize existing recipes.
* Develop innovative plating and presentation styles.
Culinary Innovation
* Introduce modern cooking techniques and global food trends.
* Conduct recipe trials and product testing.
* Experiment with new ingredients and cooking methods.
* Continuously enhance menu quality and guest experience.
Standardization
* Prepare standardized recipes (SOPs).
* Define portion sizes and presentation standards.
* Maintain recipe consistency across all outlets.
Food Cost & Profitability
* Calculate recipe costing and food cost.
* Develop cost-effective menu items without compromising quality.
* Minimize food wastage through recipe optimization.
Quality Control
* Ensure food quality, taste, texture, and presentation standards.
* Conduct regular tasting sessions and quality audits.
* Monitor consistency across all restaurant outlets.
Training & Development
* Train chefs and kitchen staff on new recipes and cooking techniques.
* Conduct product demonstrations and culinary workshops.
* Provide technical guidance to kitchen teams.
Vendor & Product Development
* Source and evaluate new ingredients and food products.
* Coordinate with suppliers for product trials.
* Recommend suitable ingredients based on quality and cost.
Documentation
* Maintain recipe manuals and technical specifications.
* Prepare recipe costing sheets and menu development reports.
* Document food trials and improvement plans.
Food Safety
* Ensure compliance with FSSAI, HACCP, hygiene, and food safety standards.
* Maintain cleanliness and safe food handling practices.
Required Skills
* Strong culinary knowledge and creativity.
* Expertise in modern cooking techniques and international cuisines.
* Menu engineering and recipe standardization.
* Food costing and inventory knowledge.
