Role Overview
We are seeking a highly experienced Bakery Production Leader with a strong background in large-scale production (500+ kg/day) for a legacy retail chain. The ideal candidate will bring deep expertise in bread, patisserie, SOP standardization, and cost optimization, along with a proven ability to drive quality, consistency, and profitability.
Key Responsibilities1. Product Quality & Recipe Optimization
· Audit and refine existing product recipes for consistency, scalability, and retail appeal
· Enhance bread production processes and develop improved dry cake recipes with:
o Standardized shelf life
o Improved texture and taste
· Ensure high-quality output aligned with brand standards
2. SOP Development & Compliance
· Design and implement SOPs for:
o Production processes
o Hygiene & food safety (HACCP / FSSAI compliance)
o Scaling operations
· Standardize workflows across departments, especially bread production
· Develop pictorial SOP manuals for easy team adoption
3. Production & Operations Management
· Oversee daily production exceeding 500+ kg output
· Ensure efficient utilization of resources and streamlined operations
· Drive continuous improvement in process efficiency and output quality
4. Team Leadership & Training
· Manage and lead a team of 20+ production staff
· Conduct structured training programs on:
o Best baking practices
o Hygiene & compliance
o Process adherence
· Build a high-performance, quality-driven team culture
5. Cost Optimization & Waste Control
· Implement systems to achieve:
o 10–20% cost optimization
o 10–15% waste reduction (via inventory & production models)
· Monitor raw material usage, yield, and wastage trends
· Introduce data-driven improvements in procurement and usage
6. Financial & Data Modeling
· Develop Excel-based models for:
o Yield analysis
o Cost tracking
o Waste monitoring
o Weekly production planning & capacity scaling
· Work closely with the Finance team to:
o Build ROI projections
o Align production with profitability goals
Key Requirements
· Diploma / Degree in Bakery & Confectionery (IIHM / IIPC or equivalent preferred)
· Strong expertise in bread, patisserie, and large-scale production
· Proven experience handling 500+ kg/day production capacity
· Hands-on experience in HACCP / FSSAI compliance & SOP frameworks
· Demonstrated success in:
o Cost control (10–20%)
o Waste reduction (10–15%)
· Strong leadership experience managing 20+ team members
· Advanced proficiency in Excel for financial & production modeling
Pay: ₹45,000.00 - ₹55,000.00 per month
