About the Role
We are looking for a skilled and experienced Senior Chef de Partie (Senior CDP – Multi-Cuisine) to join our restaurant team in Surat, Gujarat. The ideal candidate should have strong hands-on experience in multi-cuisine food preparation, excellent knowledge of kitchen operations, and the ability to lead and supervise junior kitchen staff.
The Senior CDP will be responsible for maintaining food quality, consistency, hygiene, portion control, and smooth kitchen operations within the assigned section.
Key Responsibilities
Kitchen Operations
- Manage and supervise the assigned kitchen section during daily operations.
- Prepare and execute dishes according to standardized recipes and presentation standards.
- Ensure consistent taste, quality, portion size, and presentation.
- Coordinate with the Executive Chef, and other kitchen sections for smooth service.
- Ensure timely preparation and dispatch of food during busy service periods.
- Assist in menu preparation, recipe development, and new dish trials when required.
Multi-Cuisine Expertise
- Demonstrate good knowledge of multiple cuisines and cooking techniques.
- Ability to prepare and supervise a variety of dishes across Indian, Chinese, Continental, and other relevant cuisines.
- Maintain consistency in taste and presentation across different menu items.
- Adapt to changing menus, specials, and customer requirements.
Team Supervision
- Guide and supervise Commis Chefs, kitchen helpers, and junior staff.
- Allocate daily tasks and ensure efficient workflow within the section.
- Train junior team members in cooking techniques, recipes, hygiene, and kitchen procedures.
- Maintain discipline, teamwork, grooming, and professional standards.
Food Quality & Cost Control
- Follow standardized recipes and portion-control guidelines.
- Monitor food wastage and minimize unnecessary losses.
- Check the quality and freshness of ingredients before use.
- Maintain proper food storage and ensure FIFO practices.
- Coordinate with the Chef and store/purchase team regarding ingredient requirements.
- Maintain proper mise en place for smooth service.
Hygiene & Food Safety
- Maintain high standards of personal hygiene and kitchen cleanliness.
- Follow food safety and sanitation procedures at all times.
- Ensure proper storage, labeling, temperature control, and handling of food.
- Maintain cleanliness of equipment, workstations, refrigerators, and storage areas.
- Follow company SOPs and applicable food safety standards.
Required Skills & Qualifications
- 3–6 years of experience in a professional restaurant, hotel, cloud kitchen, or food-service environment.
- Previous experience as a CDP / Senior CDP in a multi-cuisine operation is preferred.
- Strong hands-on cooking skills and knowledge of various cuisines.
- Good understanding of kitchen operations, mise en place, portion control, and food costing.
- Ability to work effectively under pressure during peak service.
- Strong team-management and communication skills.
- Good knowledge of food hygiene and safety practices.
- Ability to follow standardized recipes and maintain consistency.
- Culinary/hotel management qualification is preferred but not mandatory for candidates with strong relevant experience.
