Job Description: Online Production Quality Control (QC) Officer

Job Objective / Purpose
To ensure that all products processed in the poultry plant meet the required food safety, hygiene, and quality standards as per national (FSSAI) and international (HACCP, ISO, HALAL, FSSC 22000 etc.) requirements, and to monitor and control processes to maintain consistent product quality and compliance.
Key Roles and Responsibilities1. Raw Material Inspection
· Verify the quality and condition of live birds before processing.
· Inspect packaging materials, ice, and other inputs for hygiene and compliance.
· Monitor feed withdrawal and catching conditions has to monitor the KPI.
2. Process Quality Control (In-Line Inspection)
· Monitor OPRPs and critical control points (CCPs) in slaughtering, scalding, defeathering, evisceration, chilling, deboning, and packaging.
· Verify temperature and time controls in chilling, blast freezing, and cold storage.
· Conduct organoleptic evaluation (color, odor, texture) of carcasses and cuts.
· Ensure metal detection and weighing accuracy before final packing.
· Inspect for defects such as bruises, broken bones, bile contamination, and feathers.
· Ensure traceability of product batches.
3. Microbiological and Chemical Quality Control
· Collect and send samples for microbiological analysis (TVC, E. coli, Salmonella, Staphylococcus, Listeria, etc.).
· Monitor water, ice, air, and surface hygiene standards.
· Verify residue-free status of antibiotics and chemical contaminants.
4. Hygiene and Sanitation Monitoring
· Supervise Cleaning and Sanitation of equipment, floors, drains, and chillers.
· Conduct swab tests for hygiene verification.
· Monitor personal hygiene of workers (handwashing, PPE usage, uniforms).
· Verify pest control and waste disposal practices.
5. Documentation and Record Keeping
· Maintain records for CCP monitoring, chiller and freezer temperature logs, sanitation, and pre-op inspection checklists.
· Prepare daily quality reports and share with production & management.
· Maintain calibration, audit, and deviation records.
6. Food Safety Management
· Participate in the HACCP Team and help maintain HACCP documentation.
· Conduct internal audits and assist in certification audits (FSSAI, ISO 22000, HACCP, FSSC 22000, Halal).
· Support corrective and preventive actions (CAPA) implementation.
7. Training and Continuous Improvement
· Train production and sanitation staff on hygiene, food safety, and quality procedures.
· Identify process deviations and recommend improvements.
· Participate in root cause analysis of customer complaints or rejections.
Key Skills Required
· Knowledge of HACCP, ISO 22000, GMP, SSOP, and Halal systems.
· Understanding of microbiology, food safety, and poultry meat science.
· Strong analytical and documentation skills.
· Good communication and audit preparation skills.
Qualification and Experience
Qualification: M.Sc (Food Technology / Food Science / Microbiology) / B.Tech (Food Processing) / B.Sc food science / Microbiology
Experience: 1–2 years in QA/QC in poultry or meat processing industry. Fresher also can eligible

Pay: ₹22,000.00 - ₹25,000.00 per month
