JOB SUMMARY
We are seeking an experienced, dynamic Bar Manager to lead Paradise Lounge Bar at Hotel Le Royal Park. The successful candidate will oversee all bar operations, manage staff, drive profitability, and deliver exceptional guest experiences while maintaining the highest standards of quality, service, and compliance in our upscale hotel lounge bar.
KEY RESPONSIBILITIES
Operations Management:
- Oversee all daily bar operations including opening, closing, and service
- Ensure smooth coordination between bar, kitchen, and service teams
- Maintain bar standards, grooming, and service excellence
- Implement and enforce standard operating procedures (SOPs)
- Monitor bar efficiency and optimize workflow
Staff Management:
- Recruit, hire, and train bartenders, barbacks, and bar staff
- Create staff schedules and manage rostering
- Conduct performance evaluations and provide coaching/feedback
- Resolve staff conflicts and disciplinary issues
- Foster a positive, team-oriented work culture
- Conduct regular training on mixology, service, and compliance
Financial Management:
- Set bar budget and monitor profitability
- Control costs and manage inventory to minimize waste
- Analyze sales reports and implement revenue strategies
- Monitor liquor costs, pour costs, and profitability metrics
- Approve purchases and manage bar budget
- Prepare monthly financial reports for management
Menu Development:
- Create and update cocktail menu with signature drinks
- Develop seasonal promotions and special beverage offerings
- Source quality spirits, wines, beers, and mixers
- Conduct taste tests and ensure beverage quality consistency
- Monitor industry trends and innovate menu items
Customer Service:
- Handle guest complaints and ensure guest satisfaction
- Build relationships with VIP guests and regular customers
- Monitor service quality and maintain high standards
- Ensure compliance with alcohol service laws and responsible serving
- Create a welcoming, upscale atmosphere for guests
Inventory & Purchasing:
- Manage inventory levels and conduct regular stocktakes
- Place orders with suppliers and negotiate pricing
- Monitor stock rotation and prevent spoilage/theft
- Maintain accurate inventory records and reports
- Ensure cost-effective purchasing without compromising quality
Compliance & Safety:
- Ensure compliance with alcohol licensing and legal drinking age laws
- Implement health, safety, and hygiene protocols
- Conduct regular safety inspections and address issues
- Train staff on responsible alcohol service

QUALIFICATIONS & REQUIREMENTS
Essential:
- 5+ years of bartending experience with 2+ years in bar management
- Strong knowledge of spirits, cocktails, wines, beers, and beverage trends
- Proven track record in managing bar operations and teams
- Excellent leadership and people management skills
- Strong financial acumen (budgeting, cost control, P&L management)
- Excellent customer service and communication skills
- Physical ability to stand for extended periods and lift up to 15 kg
- Professional appearance and leadership presence
- Fluency in English and Tamil.
- Ability to work flexible shifts, including evenings, nights, weekends, and holidays
- Valid alcohol service certification and knowledge of local liquor laws
Preferred:
- Degree/Diploma in Hospitality Management, Hospitality, or related field
- Professional mixology certification (IBA, Barista, or equivalent)
- Experience managing bars in upscale hotels or fine dining restaurants
- Experience with POS systems and inventory management software
- Proven track record of increasing bar revenue and profitability
