Position: Bakery Chef
Department: Bakery & Kitchen Operations

Location: Grey Soul Coffee Roasters, Mumbai

Job Summary

Grey Soul Coffee Roasters is looking for a skilled and creative Bakery Chef to manage and execute our bakery production.

The Bakery Chef will be responsible for preparing high-quality breads, pastries, cakes and other bakery products, maintaining consistency, managing ingredients and inventory, controlling wastage, and ensuring excellent hygiene and food safety standards.

The ideal candidate should be hands-on, detail-oriented and passionate about baking, with the ability to work independently while coordinating closely with the kitchen and café team.

Key Responsibilities Bakery Production

Prepare and produce a variety of breads, pastries, cakes, cookies, muffins and other bakery products.
Follow standardized recipes and maintain consistency in taste, texture, quality and presentation.
Prepare daily mise en place and production according to business requirements.
Ensure all bakery products are prepared and available on time.
Maintain proper portioning, shaping, baking and finishing standards.
Develop new bakery products and seasonal specials when required.

Quality Control

Check the quality, freshness and presentation of all bakery products.
Maintain consistency in every batch.
Ensure proper baking temperatures and timings.
Conduct regular quality checks and identify production issues.
Minimize product defects, returns and wastage.

Inventory & Cost Control

Monitor daily bakery ingredient requirements.
Maintain proper stock levels of flour, butter, dairy, chocolate, fruits and other ingredients.
Assist with procurement and coordinate with vendors.
Follow FIFO/FEFO stock rotation.
Monitor ingredient usage and control food costs.
Record and minimize wastage and spoilage.

Hygiene & Food Safety

Maintain excellent personal hygiene and grooming.
Keep bakery workstations, ovens, mixers and equipment clean and sanitized.
Follow proper food handling, storage and temperature-control procedures.
Ensure compliance with FSSAI and Company food safety standards.
Maintain daily cleaning and sanitation schedules.

Equipment Management

Ensure proper and safe use of ovens, mixers, proofers, refrigerators and other bakery equipment.
Maintain equipment cleanliness after use.
Report equipment breakdowns or maintenance requirements immediately.
Follow proper safety procedures while operating machinery and equipment.

Teamwork & Operations

Coordinate with the Head Chef, Store Manager and kitchen team.
Plan daily production based on café requirements and expected demand.
Train and guide junior bakery staff when required.
Support the kitchen team during busy service periods.
Follow Company SOPs, recipes and operational standards.

Documentation & Reporting

Maintain daily production records.
Track ingredient consumption and wastage.
Maintain bakery inventory records.
Report production requirements, shortages and quality issues to management.
Assist management with menu costing and product development when required.

Required Skills

Strong knowledge of baking techniques and bakery production.
Good understanding of dough preparation, fermentation, proofing and baking.
Knowledge of cakes, pastries, breads, cookies and desserts.
Strong attention to detail and presentation.
Ability to follow and standardize recipes.
Good understanding of ingredient handling and food costing.
Excellent time management and organizational skills.
Ability to work independently and under pressure.
Creative approach to developing new bakery products.
Strong hygiene and food safety awareness.

Qualifications

Diploma or Certificate in Bakery & Patisserie, Culinary Arts, Hotel Management or a related field preferred.
Formal bakery training will be an advantage.

Experience

2–4 years of relevant bakery experience preferred.
Experience as a Bakery Chef, Pastry Chef or Baker in a café, restaurant, hotel or bakery is preferred.
Experience in a specialty café, premium bakery or hospitality environment will be an advantage.

Working Conditions

9-hour shift
6 working days per week
Weekly off as per Company roster.
Flexible to work weekends, holidays and rotational shifts.
Early morning shifts may be required based on production schedules.
Ability to stand for extended periods.
Comfortable working in a fast-paced bakery environment.
Work Location: In person – Fort, Mumbai
