Job Summary

The Chinese Chef – Commis 1 is responsible for assisting in the preparation and production of Chinese cuisine while maintaining the required standards of food quality, hygiene, presentation, portion control, and kitchen safety.

Key Responsibilities

Assist the Chef de Partie/Sous Chef in the daily preparation and production of Chinese dishes.
Prepare ingredients such as vegetables, sauces, noodles, rice, meats and other items as per the menu and standard recipes.
Ensure proper mise-en-place before the start of service.
Prepare Chinese dishes according to approved recipes, portion sizes and presentation standards.
Maintain consistency in taste, quality and presentation of all dishes.
Operate kitchen equipment safely and correctly.
Ensure proper storage, labelling and rotation of food items.
Check the quality and freshness of ingredients before use.
Maintain cleanliness and hygiene of the workstation, utensils and kitchen equipment.
Follow hotel food safety, hygiene and sanitation procedures at all times.
Minimize food wastage and use ingredients efficiently.
Coordinate with other kitchen team members to ensure timely preparation and service.
Inform the senior chef immediately about shortages, damaged equipment or quality issues.
Assist in receiving and storing kitchen supplies when required.
Follow all instructions given by the Chef de Partie, Sous Chef and Executive Chef.
Maintain proper personal grooming and wear the prescribed kitchen uniform and safety equipment.
Assist in maintaining proper records and checklists as assigned by the department.
Support the kitchen team during busy restaurant, banquet and special-event operations.
