JOB DESCRIPTION: CONTINENTAL COMMIS – KITCHEN

Salary: ₹15,000 – ₹22,000 per month

Job Summary

The Continental Commis is responsible for assisting the Continental Kitchen team in the preparation, cooking, presentation, and service of Continental food items. The role requires maintaining food quality, hygiene, consistency, and kitchen standards while supporting the Chef and senior kitchen team during daily operations.

Key Responsibilities

Assist the Chef and senior kitchen team in preparing Continental dishes as per standard recipes.
Perform daily mise-en-place for breakfast, lunch, dinner, banquets, and other F&B operations.
Prepare salads, sandwiches, soups, sauces, pasta, pizzas, grills, and other Continental preparations as assigned.
Follow standardized recipes, portion sizes, cooking methods, and presentation standards.
Ensure proper handling, storage, labeling, and rotation of food products.
Maintain high standards of food quality, taste, consistency, and presentation.
Check the freshness and quality of ingredients before preparation.
Assist in receiving and storing kitchen supplies as required.
Maintain cleanliness and hygiene of the workstation, kitchen equipment, utensils, and storage areas.
Follow FSSAI food safety, hygiene, sanitation, and HACCP practices as applicable.
Ensure proper temperature control and safe handling of food products.
Minimize food wastage and use ingredients efficiently.
Maintain proper FIFO/FEFO practices for food storage.
Assist in maintaining adequate mise-en-place and stock levels during service.
Operate kitchen equipment safely and report any malfunction or damage to the Chef.
Coordinate with other kitchen sections to ensure smooth and timely food production.
Support banquet and special-event food preparation whenever required.
Follow all hotel kitchen SOPs, safety procedures, and grooming standards.
Maintain discipline, punctuality, teamwork, and professional conduct within the kitchen.
Perform any other kitchen-related duties assigned by the Chef or management.

Required Skills & Competencies

Basic knowledge of Continental cuisine and cooking techniques.
Good knife-handling and food-preparation skills.
Knowledge of kitchen hygiene and food safety.
Ability to follow recipes and instructions accurately.
Good understanding of mise-en-place.
Ability to work efficiently during busy service periods.
Good teamwork and communication skills.
Positive attitude and willingness to learn.
Ability to work in a fast-paced hotel environment.
Good personal hygiene and grooming standards.

Educational Qualification & Experience

Minimum 10th / 12th pass; Diploma/Degree in Hotel Management or Culinary Arts preferred.
Freshers with relevant culinary training may be considered.
1–2 years of experience in Continental Kitchen/F&B production will be an advantage.
Experience in a hotel, restaurant, café, or hospitality environment preferred.

Working Conditions

Willingness to work in rotational shifts.
Ability to work weekends and public holidays as per business requirements.
Ability to work for extended periods in a busy kitchen environment.
Must follow all food safety, fire safety, and occupational safety procedures.

Reporting To

Chef de Partie / Sous Chef / Executive Chef

Compensation

₹15,000 – ₹22,000 per month, depending on experience, skills, and suitability.
