Job Summary
We are seeking a skilled and detail-oriented Food Chemist with hands-on experience in food analysis, laboratory testing, product formulation, and quality assurance. The ideal candidate should possess a strong understanding of food chemistry, analytical techniques, quality standards, and regulatory compliance, along with practical exposure to food manufacturing and product development.
Role Summary
Responsible for the technical formulation, stability, and functional performance of the product — ensuring active ingredients are effectively incorporated, stable, bioavailable, and compliant — while also managing day-to-day lab operations, chemical inventory, and hygiene/safety standards.
Key Responsibilities
Formulation & Technical Development
- Formulate functional beverage/food matrices incorporating active ingredients (vitamins, minerals, botanical extracts, etc.)
- Conduct solubility, stability, and compatibility studies (heat, pH, moisture, shelf-life)
- Evaluate ingredient interactions (e.g., mineral-vitamin interactions, degradation pathways)
- Optimize dosage levels for efficacy while maintaining product stability
- Run analytical testing (HPLC, titration, pH/moisture analysis) to verify potency and purity
- Ensure formulations meet nutritional/regulatory claim substantiation requirements
- Work closely with flavourist and packaging teams to finalize commercially viable formulations
- Prepare technical documentation, COAs, and specification sheets
- Support regulatory filings and label claim substantiation (with regulatory affairs team)
- Scale-up formulations from lab to pilot to production batches
Lab Operations & Chemical Management
- Prepare chemical solutions, reagents, and standards required for formulation trials and analytical testing
- Maintain accurate chemical inventory — track stock levels, usage, and reorder points
- Identify and flag chemicals/reagents running low or nearing expiry; raise timely purchase requisitions
- Ensure proper labeling, storage, and segregation of chemicals as per safety/compatibility guidelines
- Maintain Material Safety Data Sheets (MSDS) for all chemicals in the lab
- Arrange and organize lab workstations, equipment, and glassware for daily trials
Lab Maintenance & Hygiene
- Maintain basic hygiene and cleanliness standards across lab benches, equipment, and storage areas
- Ensure calibration and routine maintenance of lab instruments (pH meters, balances, HPLC, etc.) on schedule
- Follow and enforce lab safety protocols (PPE usage, spill handling, waste disposal as per norms)
- Maintain logs for equipment usage, calibration records, and chemical consumption
- Coordinate with vendors/service providers for equipment servicing and calibration
- Ensure lab audit-readiness at all times (5S/GLP practices, as applicable)
Requirements
- M.Sc./Ph.D. in Chemistry, Food Science, Pharmaceutical Sciences, or related field
- 2–4+ years in formulation chemistry (nutraceuticals/functional foods/beverages preferred)
- Strong analytical chemistry background (HPLC, spectrophotometry, titration)
- Knowledge of vitamin/mineral stability and interactions in food/beverage matrices
- Understanding of regulatory frameworks (FSSAI, FDA, EFSA depending on market)
- Working knowledge of Good Laboratory Practices (GLP) and lab safety/hygiene standards
- Strong organizational skills — comfortable owning both technical formulation work and routine lab housekeeping/inventory
- Experience with scale-up and technology transfer
