Full job description

Job Summary

We are looking for a skilled and passionate Sushi Chef to prepare high-quality sushi, sashimi, and other Japanese dishes while maintaining the highest standards of food quality, hygiene, and presentation. The Sushi Chef will be responsible for ingredient preparation, food safety compliance, inventory management, and ensuring an excellent dining experience for guests.

Key Responsibilities

Prepare and present sushi, sashimi, maki rolls, nigiri, and other Japanese dishes as per company standards.
Ensure freshness, quality, and proper storage of seafood, vegetables, and other ingredients.
Maintain food preparation areas, kitchen equipment, and workstations in a clean and hygienic condition.
Follow recipes, portion control standards, and presentation guidelines.
Monitor stock levels and assist in inventory management and ordering of ingredients.
Inspect ingredients for quality and report any issues to the Head Chef or Kitchen Manager.
Adhere to food safety, hygiene, and HACCP standards at all times.
Minimize food wastage and control food costs.
Train and support junior kitchen staff when required.
Coordinate with the kitchen team to ensure timely preparation and service of orders.
Stay updated on sushi preparation techniques and industry trends.

Requirements

Minimum 2–5 years of experience as a Sushi Chef or Japanese Cuisine Chef.
Knowledge of sushi preparation, fish handling, knife skills, and Japanese culinary techniques.
Understanding of food safety and hygiene regulations.
Ability to work in a fast-paced kitchen environment.
Strong attention to detail and presentation skills.
Good communication and teamwork abilities.
Culinary certification or relevant training is preferred.
