Role Overview: The Bar Manager at Thalassa Goa is responsible for leading all bar operations, driving beverage revenue, ensuring premium service standards, and managing a high-performing bar team in a fast-paced, high-volume nightlife environment.
This role requires strong leadership, operational expertise, financial acumen, inventory control, team development skills, and the ability to thrive under pressure. The ideal candidate is hands-on, detail-oriented, commercially driven, calm under pressure, and capable of managing large-scale operations during peak nights and events while maintaining exceptional quality and consistency.
Key Responsibilities.
1 Bar Operations Management
- Oversee day-to-day bar operations across all service periods (day dining, sunset service, nightlife, events).
- Ensure smooth and efficient service during high-volume hours, weekends, and club nights.
- Maintain strict adherence to recipes, presentation standards, and SOPs.
- Ensure bar stations are fully operational, stocked, clean, and organized at all times.
- Coordinate with kitchen, service, security, and management teams for seamless operations.
2. Team Leadership & Development
- Recruit, train, schedule, and supervise bartenders, barbacks, and support staff.
- Conduct regular training on cocktails, upselling, service standards, hygiene, and responsible alcohol service.
- Lead daily briefings and pre-shift meetings.
- Monitor team performance and provide coaching, feedback, and disciplinary action when required.
- Foster a positive, energetic, and performance-driven team culture.
3. Beverage Program & Quality Control
- Develop, update, and maintain cocktail menus in alignment with Thalassa’s brand identity.
- Ensure consistency, quality, and presentation of all beverages served.
- Monitor portion control and minimize wastage.
- Stay updated on industry trends, premium spirits, and nightlife beverage innovations.
- Collaborate with management on seasonal menus and special event offerings.
4. Inventory & Cost Control
- Manage inventory, stock ordering, and supplier coordination.
- Conduct regular stock counts and reconcile discrepancies.
- Control beverage cost percentages and maintain profitability targets.
- Monitor breakage, spoilage, and wastage.
- Ensure proper storage and handling of all beverages and perishables.
5. Financial & Revenue Management
- Drive beverage revenue through upselling strategies, promotions, and premium offerings.
- Analyze daily sales reports and identify opportunities for growth.
- Set and monitor sales targets for the bar team.
- Ensure accurate billing, POS usage, and cash handling compliance.
- Collaborate with senior management on pricing strategies and promotions.
6. Guest Experience & Service Excellence
- Maintain a visible floor presence during peak hours and events.
- Ensure high levels of guest satisfaction and engagement.
- Handle guest complaints and escalations professionally and promptly.
- Build relationships with VIP guests and repeat clientele.
- Uphold Thalassa’s premium hospitality standards at all times.
7. Nightlife & Event Management
- Oversee high-speed operations during club nights, live performances, and private events.
- Coordinate with DJs, promoters, and event teams when required.
- Ensure responsible alcohol service and compliance during high-energy operations.
- Work closely with security to manage intoxication and safety concerns.
8. Hygiene, Safety & Compliance
- Ensure compliance with all local licensing laws and responsible alcohol service regulations.
- Maintain food safety and sanitation standards.
- Enforce grooming, uniform, and hygiene standards across the bar team.
- Ensure safe handling of equipment, glassware, and bar tools.
- Maintain accurate documentation as required by law and company policy.
Working Conditions

Qualifications & Experience Required
- Minimum 4–6 years of experience in bar operations, with at least 2 years in a supervisory or managerial role.
- Strong knowledge of cocktails, spirits, wines, beers, and beverage costing.
- Proven experience managing high-volume bar or nightlife operations.
- Experience in inventory control and cost management.
- Strong leadership and team management skills.
- Proficiency in POS systems and reporting tools.
Preferred
- Experience in premium dining, nightlife venues, beach clubs, or high-end hospitality establishments.
- Knowledge of Mediterranean/Greek beverage pairings.
- Certification in responsible alcohol service (if applicable).
- Experience handling large-scale seasonal operations.
