About Paoroti
Paoroti is a cloud kitchen based in Guwahati, Assam, specialising in artisan dairy-free baked goods. Our menu includes focaccia slabs, chocolate walnut babka, sourdough discard muffins, vegan brownies, and enriched brioche — all crafted to a high, consistent standard for delivery channels.
We are a small, quality-first team. Every person we hire directly shapes the product our customers receive. These two roles — Head Baker and Line Baker — are the heart of the kitchen.
POSITION DETAILS:
Bakers assistant(intern)
The Line Baker supports the Head Baker in daily production. This is a hands-on execution role — following recipes precisely, keeping the kitchen clean and organised, and ensuring nothing runs behind. We are hiring two people in this role.

Salary Range
₹15,000 – ₹18,000 per month (based on skill level)
Core Responsibilities
- Assist the Head Baker with all stages of production: weighing, mixing, shaping, proofing, baking, and cooling
- Follow recipes exactly as written — no improvising without instruction from the Head Baker
- Prepare and organise all mise en place before the production day begins
- Monitor baking times and oven temperatures, flagging any issues immediately
- Keep the kitchen clean and organised throughout the shift — clean-as-you-go at all times
- Assist with receiving and storing ingredient deliveries correctly
- Support the Packaging & QC staff during peak order periods if needed
- Follow all food safety and hygiene protocols without exception

This role does not require an expert baker — but it does require someone genuinely eager to improve their skills. We will train the right person. A growth mindset matters more than a long CV here.
Recipe Discipline
Must be able to follow a written recipe precisely and accurately. Baking is unforgiving of guesswork. We need someone who weighs, measures, and follows timings without shortcuts.
Physical Stamina
Kitchen work is physically demanding: long hours on your feet, early mornings, lifting trays, and working near hot ovens. The candidate should be fit and comfortable in this environment.
Punctuality & Discipline
Production schedules are tight. A line baker who is regularly late or absent disrupts the entire day’s output. Reliability is essential.
Attention to Detail
Noticing that a dough hasn’t proofed correctly, that a brownie tray is overbaking, or that an ingredient is running low — these small observations make a big difference in a small kitchen.
Team Player
This person works closely with the Head Baker and one other Line Baker all day. A positive, cooperative attitude and willingness to take direction without friction is important.
Hygiene Habits
Food safety must be taken seriously. Clean hands, tied-back hair, no jewellery, and careful handling of allergen-sensitive ingredients (especially in a dairy-free kitchen).
Curiosity About Food
We want people who are interested in what they’re making — who taste the batter, ask why a dough needs this amount of proofing, and care about the final product. Passion beats indifference every time.
Qualifications & Experience
Requirement
Experience
0–2 years. Freshers with genuine interest in baking are welcome. Prior experience at a bakery, hotel kitchen, or food production unit is an advantage but not required.
Education
No formal qualification required. A short baking course, diploma, or FCI/IHM training is a bonus. Practical aptitude matters more than certificates at this level.
Basic Kitchen Skills
Should understand basic kitchen hygiene, be able to use weighing scales accurately, and be comfortable around commercial ovens and mixers.
Language
Assamese or Hindi required. Basic communication skills sufficient — ability to read a recipe card and follow spoken instructions.
Location
Must be based in or easily commutable to the kitchen location in Guwahati. Early morning start means proximity matters.
What We Will Train You In
We do not expect Line Bakers to arrive knowing everything. Here is what Paoroti will actively teach the right candidate:
- Vegan baking techniques — working with plant-based butters, milks, and tofu
- Artisan bread fundamentals — dough handling, fermentation, shaping, and scoring
- Our specific product recipes and quality standards
- FSSAI food safety and hygiene compliance
- Kitchen organisation and production flow for a cloud kitchen environment
