With a thoughtfully curated menu centred around contemporary Continental cuisine, artisan sourdough sandwiches, gourmet paninis, handcrafted beverages, and premium café offerings, Zilch is set to become one of Mumbai's most exciting dining destinations.

About the Role

We're looking for a passionate and experienced Sous Chef to join our opening team and play a key role in shaping the culinary experience at Zilch Café.

Working closely with the Head Chef, you'll oversee daily kitchen operations, maintain exceptional food quality, mentor the culinary team, and ensure every dish reflects the premium standards of our brand. In addition to leading the kitchen at Zilch Café, you'll also support the culinary operations of selected DJRS Hospitality cloud kitchen brands, offering you the opportunity to work across multiple concepts and contribute to the group's growing culinary portfolio.

Key Responsibilities

Assist the Head Chef in managing the day-to-day operations of the kitchen.
Supervise food preparation and service to ensure consistency, quality, and presentation.
Lead, train, and motivate the kitchen team to maintain the highest culinary standards.
Ensure all dishes are prepared according to standardized recipes and specifications.
Monitor food quality, portion control, and plating standards.
Manage kitchen schedules and support efficient workflow during service.
Oversee inventory, stock rotation, ordering, and food cost control.
Minimize wastage through effective production planning and inventory management.
Maintain the highest standards of hygiene, sanitation, and food safety.
Collaborate on seasonal menus, new dishes, and product innovation.
Support culinary operations, menu execution, and quality standards across selected DJRS Hospitality cloud kitchen brands as required, ensuring consistency across concepts.

Requirements

Proven experience as a Sous Chef or Senior CDP in a premium café, restaurant, hotel, or hospitality establishment.
Strong expertise in Continental cuisine.
Excellent knowledge of kitchen operations, food safety, HACCP, and quality standards.
Strong leadership, communication, and team management skills.
Ability to perform under pressure while maintaining exceptional quality.
Passion for innovation, consistency, and guest satisfaction.
Hospitality industry experience is essential.
