Position Summary
The Commis Chef - Indian Pantry / Halwai will be responsible for assisting in the preparation and execution of Indian hot kitchen, pantry, sweets, breads, and mise-en-place while maintaining the highest standards of food quality, hygiene, and consistency. The role requires strong knowledge of Indian ingredients, traditional cooking methods, and commercial kitchen operations.
Key ResponsibilitiesFood Preparation & Production
- Prepare mise-en-place as per production requirements.
- Assist in preparation of Indian curries, gravies, kebabs, tandoor accompaniments, snacks, and regional specialties.
- Prepare Indian desserts and traditional sweets as directed by senior chefs.
- Ensure consistency in taste, presentation, portioning, and quality.
- Follow standardized recipes and production guidelines.
- Support live service and ensure timely dispatch of orders.
Indian Pantry & Halwai Operations
- Prepare chutneys, marinades, pickles, spice blends, dessert components, and garnishes.
- Assist in preparation of mithai, halwas, rabri, kheer, kulfi, shrikhand, phirni, and seasonal Indian desserts.
- Monitor storage and usage of dairy products, nuts, spices, and dry goods.
- Maintain freshness and quality of all prepared items.
Quality & Hygiene
- Follow FSSAI food safety standards and kitchen SOPs.
- Ensure proper food handling, storage, labeling, and FIFO practices.
- Maintain personal hygiene and cleanliness of workstations.
- Report any quality or food safety concerns immediately.
Inventory & Cost Control
- Minimize wastage and maintain portion control.
- Assist in stock rotation and daily inventory checks.
- Inform supervisors regarding shortages or quality issues.
- Use ingredients responsibly to support food cost targets.
Teamwork
- Work closely with kitchen team members during preparation and service.
- Support fellow chefs during peak operational periods.
- Participate in training and skill development programs.
Desired Skills & Knowledge
- Strong understanding of Indian cuisine and regional flavors.
- Knowledge of traditional Indian sweets and dessert preparation.
- Familiarity with commercial kitchen equipment and production processes.
- Understanding of food safety, hygiene, and sanitation practices.
- Ability to work in a fast-paced restaurant environment.

EligibilityFor Commis III
- 1 to 2 years of experience in an Indian kitchen, sweet kitchen, catering unit, or premium restaurant.
For Commis II
- 2 to 4 years of experience in Indian hot kitchen, pantry, or halwai section.
For Commis I
- 4 to 6 years of experience in a reputed standalone restaurant, hotel, or specialty Indian restaurant.
Education
- Hotel Management, Craft Course, Food Production Certification preferred.
- Relevant hands-on kitchen experience may be considered in lieu of formal qualifications.

Preferred Candidate Profile
Candidates with experience in premium Indian restaurants, regional Indian cuisine, mithai production, catering operations, or hotel kitchens will be preferred. Knowledge of traditional Indian desserts, spice management, and large-scale preparation is an added advantage.
Salary: As per experience and competency.
Location: Churchgate, Mumbai.
Employment Type: Full-Time.
Pay: ₹18,000.00 - ₹30,000.00 per month
