Job Description – Head Pastry Chef (Café)

Job Title: Head Pastry Chef
Department: Kitchen / Culinary
Reports To: Executive Chef / Head of Operations
Location: Café

Job Summary

We are looking for an experienced and creative Head Pastry Chef to lead our pastry and bakery operations. The ideal candidate should have strong experience in cafés, bakeries, or premium hospitality establishments and possess excellent knowledge of pastries, desserts, cakes, viennoiserie, breads, and other baked products.

The Head Pastry Chef will be responsible for developing innovative products, maintaining consistent quality, managing the pastry team, controlling food costs, and ensuring the highest standards of hygiene and presentation.

Key Responsibilities

Lead and manage all pastry and bakery operations for the café.
Create, develop, and regularly update innovative dessert, pastry, bakery, and café menus.
Prepare and supervise the production of cakes, pastries, desserts, cookies, breads, viennoiserie, and other bakery products.
Ensure consistency in taste, quality, portion size, and presentation.
Develop seasonal and special menus based on customer preferences and market trends.
Train, supervise, and motivate the pastry and bakery team.
Ensure proper production planning and preparation to minimize wastage.
Monitor food costs, portion control, and inventory usage.
Coordinate with the purchase and store teams for the timely availability of ingredients and supplies.
Maintain stock levels and ensure proper storage and rotation of ingredients using FIFO procedures.
Ensure all food safety, hygiene, sanitation, and kitchen safety standards are strictly followed.
Maintain cleanliness and organization of the pastry and bakery section.
Conduct regular quality checks on all products before service.
Manage product standardization and ensure all recipes are properly documented.
Introduce new concepts and products to improve the café's dessert and bakery offerings.
Work closely with the management and kitchen team to achieve operational and financial targets.
Handle customer feedback related to desserts and bakery products and continuously improve quality.

Required Skills & Qualifications

Proven experience as a Head Pastry Chef, Pastry Chef, or Senior Pastry Chef in a reputed café, bakery, hotel, or restaurant.
Strong knowledge of international and modern pastry techniques.
Experience in preparing cakes, desserts, pastries, breads, cookies, viennoiserie, and plated desserts.
Creative mindset with strong attention to detail and presentation.
Excellent knowledge of food costing, inventory management, and wastage control.
Strong leadership and team management skills.
Ability to work efficiently in a fast-paced hospitality environment.
Good understanding of food safety and hygiene standards.
Ability to develop new recipes and standardize existing products.

Experience

Minimum 5–8 years of experience in pastry and bakery operations.
At least 2–3 years of experience in a leadership or supervisory role.
Experience working in a reputed café, bakery, premium restaurant, or hotel will be preferred.

Education

Diploma or Degree in Bakery & Pastry Arts, Culinary Arts, or Hospitality Management will be preferred.
