Smoke Culture by Steve | Kochi, Kerala

Smoke Culture by Steve is looking for an experienced and passionate Head Chef to lead our kitchen operations and maintain the food quality and standards that define Smoke Culture.

Role

As Head Chef, you will be responsible for overseeing daily kitchen operations, managing the kitchen team, maintaining consistency in food preparation, and ensuring that every dish meets our standards for quality, flavour, and presentation.

Key Responsibilities

Lead and supervise the kitchen team during daily operations.
Oversee food preparation, cooking, plating, and service.
Maintain consistency in recipes, portion sizes, taste, and presentation.
Plan and coordinate daily kitchen prep and production.
Monitor food quality, freshness, storage, and hygiene standards.
Coordinate meat preparation, smoking, sides, sauces, and other kitchen production.
Ensure proper stock rotation and minimise food wastage.
Coordinate with the management team on menu requirements and daily production.
Train, guide, and evaluate kitchen staff.
Ensure kitchen SOPs, food safety practices, and cleaning standards are followed.
Manage kitchen workflow during busy service periods.
Identify operational issues and take quick corrective action.
Contribute to menu development, specials, and improvement of existing dishes.
Maintain a clean, organised, and professional kitchen environment.

Shift Timing

The role involves split-shift operations:

Morning: 9:00 AM – 4:00 PM
Evening: 6:00 PM – 11:00 PM

Candidates should be comfortable working in a split-shift restaurant environment.

Requirements

Minimum 3–5 years of experience in a professional kitchen, preferably in a senior chef or kitchen leadership role.
Strong knowledge of food preparation, cooking techniques, kitchen operations, and hygiene.
Experience managing and training kitchen staff.
Strong organisational and time-management skills.
Ability to work effectively under pressure during high-volume service.
Good understanding of inventory, portion control, and food costing.
Passion for quality food and consistency.
Experience with BBQ, smoking, grills, or meat-focused cuisine is an advantage.
