Position Summary:
We are looking for Commi 1 and Commi 2 level chefs specializing in Pastry and Bakery. The ideal candidates will be responsible for the daily preparation and production of high-quality breads, desserts, and pastries, ensuring they meet our rigorous brand standards for flavor, texture, and visual presentation.
Key Responsibilities
1. Culinary Production & Execution
Pastry Arts:Prepare a wide range of desserts including mousses, tarts, cakes, and plated desserts with a focus on fine-dining aesthetics.
Bakery & Viennoiserie: Handle dough fermentation, shaping, and baking of artisanal breads, focaccias, and laminated pastries (croissants, danishes).
Technical Precision: Accurately follow standardized recipes and technical sheets to ensure consistency across the chain.
Decorating: Execute advanced plating techniques, chocolate work, and sugar garnishes as per the Chef de Partie’s instructions.
2. Operational Excellence
Mise-en-place: Manage the daily station setup, ensuring all components are ready for service or distribution.
Inventory Management: Monitor stock levels of specialized ingredients (high-quality chocolate, imported flours, etc.) and minimize wastage.
Equipment Care: Operate and maintain specialized pastry equipment (deck ovens, proofers, planetary mixers, chocolate temperers).
3. Quality Control & Hygiene
Maintain the highest standards of food safety and sanitation (HACCP/FSSAI compliance).
Conduct regular quality checks on finished products for taste, texture, and appearance.
Ensure proper labeling, dating, and storage of all pastry components.
Candidate Profile

Experience 3–5 years in a Fine Dining or Luxury Hotel pastry kitchen.
1–3 years in a high-end pastry or bakery environment.
Education
Degree/Diploma in Culinary Arts or specialized Pastry course. Certificate or Diploma in Bakery/Pastry.
Skill Level
Advanced dough handling, chocolate tempering, and complex plating. Strong foundational skills in sponges, creams, and basic doughs.
Leadership
Able to guide trainees and manage a station independently. | Eager learner with a focus on speed and accuracy.
Technical Skills Required
Deep understanding of *baker’s percentages* and hydration levels.
Proficiency in French pastry techniques (Ganache, Pâte à Choux, Crème Anglaise).
Experience with high-volume production without compromising on "fine-dining" quality.
Knowledge of modern pastry trends (vegan, gluten-free, or low-sugar alternatives) is a plus.
