About the Role

Mia Cuccinna is a premium Italian restaurant and bar in Bandra West, Mumbai. We are looking for an experienced and dynamic Bar Manager to manage the complete bar operations, lead the bar team, maintain beverage quality, control costs, and deliver an exceptional guest experience.

The ideal candidate should have strong knowledge of cocktails, spirits, inventory management, team handling, and premium hospitality operations.

Key Responsibilities

Manage the complete day-to-day operations of the bar.
Lead, supervise, train, and motivate bartenders and bar staff.
Ensure high standards of cocktail quality, presentation, service, and guest experience.
Create and maintain classic and signature cocktail menus in coordination with management.
Ensure proper bar mise-en-place and smooth operations during peak hours.
Maintain detailed knowledge of spirits, wines, beers, liqueurs, cocktails, mocktails, and beverage trends.
Manage bar inventory, stock receiving, storage, requisitions, and daily stock movement.
Conduct regular stock audits and inventory reconciliation.
Control beverage costs, wastage, breakage, and over-pouring.
Monitor sales and identify opportunities to improve bar revenue and profitability.
Ensure all drinks are prepared according to standard recipes and portion controls.
Handle guest feedback, complaints, and special beverage requests professionally.
Coordinate with the Restaurant Manager, Service Team, Kitchen, and Management for smooth operations.
Ensure proper cleanliness, hygiene, grooming, and safety standards across the bar.
Maintain compliance with applicable liquor licensing, responsible alcohol service, and company policies.
Prepare daily/weekly reports related to sales, stock, consumption, wastage, and bar performance.
Manage staff scheduling, attendance, leave, and shift allocation.
Ensure proper opening and closing procedures are followed.
Stay updated with new cocktails, beverage trends, premium spirits, and mixology techniques.

Candidate Requirements

4–8 years of experience in bar operations, preferably in a premium restaurant, lounge, hotel, or lifestyle bar.
Previous experience as a Bar Manager / Assistant Bar Manager / Senior Bartender is preferred.
Strong knowledge of mixology, cocktails, spirits, wines, beers, and beverage operations.
Excellent team leadership and people-management skills.
Strong understanding of bar inventory, costing, stock control, and wastage management.
Good knowledge of POS systems and basic reporting.
Strong communication and guest-handling skills.
Well-groomed, confident, professional, and hospitality-focused.
Ability to work under pressure and manage high-volume service.
Flexible to work rotational shifts, weekends, and holidays.
Experience in a premium/lifestyle restaurant or bar will be an added advantage.
