Sous Chef – 416 Pasta Bar

Location: Andheri West, Mumbai
Job Type: Full-time
Experience: 3–5 years preferred

About 416

416 Pasta Bar is a modern pasta and café concept focused on fresh handmade pasta, from-scratch sauces, quality ingredients and thoughtful cooking techniques.

We are looking for a hands-on and experienced Sous Chef to join our opening kitchen team and help build and maintain the kitchen standards at 416.

Key Responsibilities

Assist the Head Chef/management in running day-to-day kitchen operations.
Lead and supervise the kitchen team during service.
Ensure all dishes are prepared consistently according to 416 recipes and standards.
Oversee daily mise en place, prep lists and kitchen readiness.
Supervise fresh pasta production, sauces, stocks, marinades and other preparations made in-house.
Be confident working with chicken, seafood and other proteins, including grilling, roasting, searing, braising and frying.
Maintain proper portioning, seasoning, plating and presentation standards.
Train and guide cooks and junior kitchen staff.
Ensure kitchen hygiene, food safety, storage and FIFO standards are followed.
Monitor food quality, wastage and portion control.
Check stock levels and communicate purchasing requirements to the senior team.
Help maintain recipe consistency and assist with recipe development and menu trials.
Handle service calmly and efficiently during busy periods.
Identify and solve kitchen problems quickly and professionally.
Ensure opening and closing procedures are completed correctly.
Step in and lead the kitchen when the Head Chef is not present.

What We’re Looking For

3–5 years of professional kitchen experience preferred.
Previous Sous Chef / Senior CDP / Kitchen Supervisor experience preferred.
Strong cooking and knife skills.
Excellent understanding of fresh pasta and Italian-style cooking is highly preferred.
Strong knowledge of sauces, stocks, marinades and cooking techniques.
Confident handling and cooking of meat and seafood.
Strong understanding of food safety and kitchen hygiene.
Good leadership and team-management skills.
Able to train, motivate and manage junior kitchen staff.
Organized and comfortable managing prep and service simultaneously.
Strong attention to detail and consistency.
Punctual, disciplined and reliable.
Calm under pressure and able to make decisions during busy service.
Open to feedback and willing to continuously learn.

You’ll Stand Out If You Have

Strong fresh pasta production experience.
Italian restaurant experience.
Experience setting up or opening a new restaurant.
Experience creating SOPs and kitchen systems.
Experience with food costing, portion control and inventory.
Experience developing new dishes and menu items.
Experience training and managing a kitchen team.
