About Zilch

Zilch is an upcoming premium all-day dining café by DJRS Hospitality LLP, set to open in the heart of Breach Candy, Mumbai.

With a menu centred around contemporary Continental cuisine, artisan sourdough sandwiches, gourmet paninis, premium café fare, and thoughtfully crafted dishes, Zilch is being created for a new generation of diners who care about quality, creativity, and experience.

And we're building the kitchen team from the ground up.

About the Opportunity

We're looking for Commis I, Commis II, and Commis III chefs who bring energy, curiosity, discipline, and a genuine desire to grow.

This is a particularly exciting opportunity for chefs who are early in their careers and want to learn beyond simply executing the same set of dishes every day.

As part of the pre-opening team, you'll get the opportunity to experience the process of building a kitchen from the ground up — from preparation and trials to menu execution, kitchen systems, opening operations, and maintaining standards once service begins.

You'll work closely with experienced chefs, learn different aspects of contemporary café cuisine, and have the opportunity to progressively take on greater responsibility as you grow.

What You'll Do

Assist in the preparation and execution of dishes according to Zilch's recipes and standards.
Work across assigned kitchen sections and support the team during preparation and service.
Maintain consistency in taste, quality, portioning, and presentation.
Follow mise en place and production requirements for smooth service.
Maintain high standards of cleanliness, hygiene, and food safety.
Ensure proper handling, storage, and rotation of ingredients.
Support the team during busy service periods and maintain an organized workstation.
Learn and follow standardized recipes, preparation techniques, and kitchen procedures.
Participate in pre-opening trials, menu tastings, recipe testing, and kitchen setup.
Take ownership of your section and continuously improve your skills.
Work collaboratively with the wider culinary team to ensure smooth kitchen operations.
