About the Role
Amaru is seeking a dedicated and service-driven Food & Beverage Captain to support the daily operations of our restaurant floor. This role is ideal for hospitality professionals who take pride in delivering exceptional guest experiences and maintaining high standards of service.
The Captain will play a key role in coordinating service staff, ensuring operational efficiency, and maintaining the refined service standards expected in a premium dining environment.
Key Responsibilities
Restaurant Operations
- Assist in preparing the restaurant for service, including table setups, equipment readiness, and overall floor presentation
- Ensure the dining area remains clean, organized, and guest-ready throughout service hours
- Monitor service flow and support the team to maintain efficient and timely operations
Guest Experience
- Welcome and greet guests professionally while assisting with seating and menu presentation
- Take accurate food and beverage orders and ensure smooth coordination with the kitchen and bar
- Serve food and beverages in accordance with established service standards
- Address guest queries, feedback, and concerns promptly and courteously
Team Support & Coordination
- Guide and support junior service staff during operations
- Assist team members during peak hours to maintain seamless service
- Encourage adherence to service etiquette, grooming, and operational standards
Quality & Hygiene Standards
- Maintain cleanliness and hygiene across dining areas and service stations
- Ensure compliance with food safety, sanitation, and operational protocols
- Restock and maintain service stations including cutlery, crockery, and glassware
Closing Duties
- Assist in closing procedures such as clearing tables, resetting the dining area, and preparing the restaurant for the next shift

- Solid understanding of restaurant floor operations and service etiquette

- Ability to perform effectively in a fast-paced restaurant environment
- High attention to detail and commitment to cleanliness and presentation
Qualifications & Experience
- Diploma or certification in Hotel Management / Hospitality preferred
- 2–3 years of experience in food & beverage service within a restaurant or hotel
- Previous experience as a Senior Steward or Waiter with leadership responsibilities is an advantage
- Familiarity with POS systems and basic inventory handling preferred
