Job Summary
We are looking for an experienced, highly accountable, and commercially driven General Manager to take complete ownership of our upcoming flagship food and beverage outlet in Whitefield, Bengaluru.
This is a leadership role requiring the candidate to manage the outlet as an independent business unit. The General Manager will be responsible for completing the pre-opening project, building and training the team, driving sales, controlling costs, managing daily operations, and delivering the targeted profitability.
The selected candidate will work closely with the Managing Director during the project-completion stage and will subsequently take complete responsibility for the outlet’s revenue, P&L, customer experience, manpower, marketing, administration, and operational performance.
Key Responsibilities1. Pre-Opening and Project Completion
- Coordinate with the Managing Director, contractors, vendors, consultants, and internal departments for timely completion of the Whitefield outlet.
- Prepare and track a detailed pre-opening checklist covering civil work, interiors, equipment installation, statutory approvals, technology systems, recruitment, menu readiness, vendor onboarding, and trial operations.
- Conduct daily project reviews and provide clear progress reports to the Managing Director.
- Identify delays, operational gaps, and dependencies and ensure immediate corrective action.
- Ensure the outlet is fully prepared for soft launch and commercial opening.
2. Complete P&L Ownership
- Take complete ownership of the outlet’s sales, gross margin, food cost, manpower cost, overheads, wastage, and net profitability.
- Prepare annual, monthly, weekly, and daily revenue and expense targets.
- Monitor the outlet P&L and identify opportunities to improve profitability.
- Control food cost, packaging cost, discounts, utilities, maintenance, consumables, and other operating expenses.
- Analyse product-wise and category-wise contribution margins.
- Ensure that the outlet achieves its targeted sales and EBITDA.
- Prepare regular MIS reports and present business performance to the management.
3. Sales Team Creation and Revenue Growth
- Recruit, structure, and manage a dedicated sales and business-development team.
- Train the sales team on products, customer handling, institutional sales, corporate gifting, catering, events, and bulk-order acquisition.
- Develop daily, weekly, and monthly sales targets for individual team members.
- Build corporate, residential, institutional, and local business partnerships in and around Whitefield.
- Drive dine-in, takeaway, delivery, bulk-order, catering, gifting, and corporate sales.
- Develop strategies to increase average order value, repeat business, footfall, and customer retention.
- Personally intervene in major sales opportunities and high-value customer relationships.
4. Outlet Operations
- Ensure smooth day-to-day operations across all food, beverage, service, takeaway, delivery, and customer-facing departments.
- Develop and implement SOPs for opening, closing, service, billing, cash handling, hygiene, inventory, wastage, complaints, and escalation management.
- Ensure coordination between the kitchen, service, cashier, sales, marketing, purchase, stores, housekeeping, security, and maintenance teams.
- Maintain high standards of food quality, presentation, speed of service, cleanliness, and customer experience.
- Ensure operational readiness during peak hours, weekends, festivals, and promotional periods.
- Conduct daily briefings and performance reviews with departmental heads.
5. Recruitment, Training and HR Management
- Prepare the manpower structure for all departments.
- Recruit outlet managers, supervisors, captains, stewards, cashiers, sales executives, kitchen staff, housekeeping staff, and support teams.
- Create structured induction and training programmes.
- Establish KRAs, KPIs, reporting structures, duty rosters, attendance controls, and performance-review systems.
- Monitor employee productivity, discipline, grooming, attendance, retention, and workplace conduct.
- Build a performance-driven culture with clear accountability.
- Coordinate with HR for salary processing, statutory compliance, documentation, incentives, and employee grievances.
6. Marketing and Brand Development
- Create and execute a local-area marketing plan for the Whitefield market.
- Coordinate with digital marketing, social media, design, public relations, and influencer teams.
- Plan launch campaigns, events, sampling activities, corporate outreach, residential activations, festive promotions, and customer-engagement programmes.
- Monitor the effectiveness and return on investment of all marketing activities.
- Build relationships with nearby companies, technology parks, residential communities, event organisers, institutions, and premium customer groups.
- Ensure correct brand representation across the outlet, packaging, communication, online platforms, and customer touchpoints.
7. Financial and Accounting Controls
- Ensure accurate billing, cash management, daily sales closure, bank deposits, expense booking, and reconciliation.
- Coordinate with the accounts department for invoices, vendor payments, taxation, payroll inputs, and outlet-level financial reporting.
- Monitor cash, card, UPI, aggregator, credit, corporate, and online-order reconciliations.
- Ensure that all purchases, expenses, discounts, complimentary orders, refunds, and void transactions are properly authorised.
- Prevent revenue leakage, pilferage, unauthorised discounts, and inventory losses.
- Maintain complete documentation and audit readiness.
8. Purchase, Inventory and Vendor Management
- Coordinate with purchase and production teams to ensure uninterrupted supply of raw materials, packaging, consumables, and operating supplies.
- Establish minimum and maximum inventory levels.
- Monitor stock movement, stock ageing, yield, wastage, variance, and pilferage.
- Conduct periodic physical stock audits.
- Evaluate vendor quality, pricing, service levels, and delivery performance.
- Ensure that purchases remain aligned with approved budgets and quality standards.
9. Customer Experience and Reputation Management
- Create a consistently premium and welcoming customer experience.
- Personally handle serious complaints, VIP customers, bulk-order clients, and service-recovery situations.
- Monitor customer reviews and feedback across all aggregators, social media, and other platforms.
- Implement corrective actions based on customer feedback.
- Improve repeat-customer ratio, ratings, referrals, and customer loyalty.
10. Compliance, Hygiene and Safety
- Ensure compliance with FSSAI, labour laws, fire safety, local licences, health standards, and other statutory requirements.
- Maintain strict standards for food safety, hygiene, pest control, storage, temperature monitoring, and employee health.
- Conduct regular operational, hygiene, safety, and cash-control audits.
- Ensure that equipment, utilities, electrical systems, fire-safety systems, and maintenance schedules are properly managed.
Key Performance Indicators
The General Manager will be evaluated on:
- Achievement of monthly sales targets.
- Outlet profitability and EBITDA.
- Food cost, manpower cost, and overhead control.
- Timely completion and opening of the project.
- Customer ratings and complaint-resolution standards.
- Average order value and repeat-customer percentage.
- Corporate, catering, gifting, and bulk-order revenue.

- Hygiene, compliance, and audit scores.

- Accuracy and timeliness of MIS and P&L reporting.
Candidate Requirements
- Minimum 5-8 years of experience in restaurant, hotel, QSR, café, sweets, bakery, retail food, or hospitality operations.
- At least 3–5 years in a General Manager, Business Head, Cluster Head, or senior outlet-leadership position.
- Demonstrated experience in handling outlet-level P&L.
- Experience in launching or setting up a new restaurant or food-retail outlet is strongly preferred.
- Strong knowledge of sales, operations, manpower planning, food cost, inventory, marketing, and financial controls.
- Ability to build teams and establish systems from the ground up.
- Strong commercial understanding and data-driven decision-making ability.
- Excellent leadership, communication, negotiation, and problem-solving skills.
- Comfortable working directly with promoters and senior management.
- Must be willing to take complete ownership rather than operate only within a limited departmental role.
- Good knowledge of the Whitefield and Bengaluru market will be an advantage.
- Proficiency in Microsoft Excel, POS systems, inventory software, online delivery platforms, and management reporting.

Compensation
CTC: Up to ₹15,00,000 per annum, depending on experience, previous performance, and suitability for the role.
